Ingredients

  • Tortilla wraps
  • Ground beef or turkey
  • Taco seasoning
  • Shredded cheese (cheddar works beautifully)
  • Bell peppers (optional)
  • Onion (optional)
  • Sour cream (for serving)
  • Lettuce (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grab your tortilla wraps and cut them into muffin-sized circles, then gently press them into a greased muffin tin.
  3. Brown your ground meat (beef or turkey) in a skillet over medium heat until fully cooked.
  4. Sprinkle taco seasoning over the meat and stir for an even mix of flavors.
  5. Add diced bell peppers and onions to the skillet (if using), mingling for about five minutes.
  6. Spoon the savory meat mixture into the tortilla cups in the muffin tin.
  7. Top each muffin generously with shredded cheese.
  8. Bake for 15-20 minutes, or until cheese is melted and tortillas are golden brown.
  9. Serve warm, topped with sour cream and lettuce.

Notes

Feel free to customize by adding different toppings or swap out ground meat for beans for a vegetarian version.
