Description

A heartwarming side dish combining crispy roasted potatoes and creamy feta cheese, perfect for any weeknight dinner.


Ingredients

  • 4 large potatoes, cubed
  • 1 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed potatoes with olive oil, garlic powder, oregano, salt, and pepper in a large bowl until evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast in the preheated oven for about 25-30 minutes, or until golden and crispy, stirring halfway through.
  5. Remove from the oven and sprinkle the crumbled feta cheese over the top.
  6. Return to the oven for an additional 5-10 minutes until the feta is warmed and slightly golden.
  7. Garnish with fresh parsley if desired and serve.

Notes

These potatoes can be prepped in advance and stored in the fridge for up to 2 hours before roasting. Leftovers can be stored in an airtight container for up to three days.
