  • 1 can (15 oz) kidney beans, drained and rinsed
  • 4 cups beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup corn kernels (fresh or frozen)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. In a large pot over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add the diced onion and garlic; sauté until the onion is translucent, filling your kitchen with aromatic bliss.
  3. Stir in the diced carrots and celery, cooking for about 5 minutes until they are slightly softened—think tender yet crisp!
