- 1 cup coconut water
- 1/2 cup freshly squeezed lemon juice
- 1/2 cup simple syrup
- 1/2 teaspoon culinary lavender
- 2 cups chilled water or soda water
- Ice cubes
- Lemon slices for garnish
- Lavender sprigs for garnish
Instructions
- Combine the simple syrup and culinary lavender in a small pot. Heat gently until fragrant, about a few minutes. Remove from heat and let steep for about 15 minutes. Strain and cool.
- Mix together the coconut water, lemon juice, the cooled lavender syrup, and chilled water (or soda water) in a pitcher.
- Stir well and taste. Adjust sweetness as needed by adding extra syrup if desired.
- Serve in glasses filled with ice cubes, garnished with lemon slices and lavender sprigs for a beautiful finish.
Notes
Make the lavender syrup in advance and store it in the refrigerator for up to a week. Adjust sweetness to your taste.
