Ingredients

- 4 very large green bell peppers or about 5 small ones
- 1 (15 ounce) can tomato sauce
- 1/2 pound ground beef or turkey
- 1/3 cup chopped onion
- 1 cup cooked brown or white rice
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon garlic powder
Instructions
- Prep the peppers: Cut the tops off the peppers and remove the seeds to create your little flavor boats.
- Blanch the peppers: Place the peppers in a large saucepan, cover with water, and bring to a gentle simmer. Cook for about 3 minutes until the peppers are slightly soft. Drain and rinse with cool water, then set aside on paper towels to dry.
- Cook the filling: In a skillet, heat the ground beef (or turkey) and chopped onion over medium heat. Cook until no pink remains in the meat. Drain any excess fat if necessary.
- Mix the ingredients: In a bowl, add the salt, pepper, cooked rice, garlic powder, and half of the tomato sauce to the meat mixture. Stir well to combine.
- Stuff the peppers: Spoon the delicious filling into each pepper until they’re overflowing with goodness.
- Top with sauce: Pour the remaining tomato sauce over the stuffed peppers for that added moisture and flavor.
- Bake: Arrange the stuffed peppers in an ungreased baking dish and bake in a preheated oven at 350°F for 25-30 minutes. They should be golden and heated through!
- Serve warm: Remove from the oven and let them cool slightly before serving.
Notes
Make the filling a day ahead for quick baking. Store leftovers in an airtight container.
