Description

A heartwarming Chicken and Rice Casserole that combines tender chicken, creamy mushroom soup, and melted cheddar cheese, creating the ultimate comfort dish for any occasion.


Ingredients

  • 2 cups cooked rice
  • 2 cups cooked chicken, shredded or diced
  • 1 cup cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cooked rice, cooked chicken, cream of mushroom soup, chicken broth, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper in a large mixing bowl. Mix until well combined.
  3. Transfer the mixture to a greased casserole dish, spreading it evenly.
  4. Sprinkle the shredded cheddar cheese on top.
  5. Cover the dish with foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.

Notes

For a spicy twist, add diced jalapeños, or try using different vegetables for variety. You can also prepare the casserole a day in advance and bake it straight from the fridge.
