- 2 cups cooked rice
- 2 cups cooked chicken, shredded or diced
- 1 cup cream of mushroom soup
- 1 cup chicken broth
- 1 cup frozen mixed vegetables
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the cooked rice, cooked chicken, cream of mushroom soup, chicken broth, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper in a large mixing bowl. Mix until well combined.
- Transfer the mixture to a greased casserole dish, spreading it evenly.
- Sprinkle the shredded cheddar cheese on top.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
For a spicy twist, add diced jalapeños, or try using different vegetables for variety. You can also prepare the casserole a day in advance and bake it straight from the fridge.
