- 1 1/2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/3 cup butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups apples, peeled and chopped
- 1/2 cup caramel sauce
- 1 teaspoon cinnamon
- Optional: whipped cream and extra caramel for serving
Instructions
- Preheat your oven to 325°F (165°C). Grease a 9×9-inch baking pan.
- Mix the graham cracker crumbs, 1/2 cup sugar, and melted butter until combined. Press the mixture into the bottom of the prepared pan to form the crust.
- Beat together the cream cheese, 1/2 cup sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
- Fold in the chopped apples and cinnamon.
- Pour the cheesecake mixture over the crust in the baking pan. Drizzle the caramel sauce on top and swirl with a knife for that perfect marbled effect.
- Bake for 30-35 minutes or until set, with a soft jiggle in the center—trust me, it will firm up as it cools!
- Allow to cool, then refrigerate for at least 2 hours before slicing into bars. Serve with whipped cream and extra caramel if desired.
