- 140 g unsalted butter (room temperature)
- 100 g neutral oil
- 283 g whole milk (room temperature)
- 2 eggs (room temperature)
- 1 tbsp vanilla extract
- 227 g unsalted butter (room temperature) for frosting
- 340 g powdered sugar (sifted)
- 12 oz cream cheese (cold)
- Additional spices or toppings for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Whisk together the all-purpose flour, baking powder, kosher salt, cinnamon, cardamom, ginger, allspice, nutmeg, and cloves in a large mixing bowl.
- Cream the room-temperature butter and dark brown sugar together until light and fluffy, about 4-5 minutes.
- Add the neutral oil, whole milk, eggs, and vanilla extract to the butter mixture. Mix on medium speed until well combined.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cakes in the pans for 10 minutes before transferring them to wire racks to cool completely.
- Prepare the cream cheese frosting while the cakes are cooling by beating the cold cream cheese and room-temperature butter until creamy.
- Add the sifted powdered sugar gradually, mixing until fluffy.
- Spread a generous layer of frosting on the first cake layer, place the second layer on top, and frost the top and sides of the cake.
