Description

A tender, spiced cake filled with rich flavors of chai tea, topped with creamy frosting – perfect for cozy gatherings in fall.


Ingredients

  • 320 g dark brown sugar
  • 15 g baking powder
  • 1 teaspoon kosher salt
  • 1 tbsp cinnamon
  • 2 tsp cardamom
  • 1 tsp ginger
  • 1 tsp allspice
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 140 g unsalted butter (room temperature)
  • 100 g neutral oil
  • 283 g whole milk (room temperature)
  • 2 eggs (room temperature)
  • 1 tbsp vanilla extract
  • 227 g unsalted butter (room temperature) for frosting
  • 340 g powdered sugar (sifted)
  • 12 oz cream cheese (cold)
  • Additional spices or toppings for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Whisk together the all-purpose flour, baking powder, kosher salt, cinnamon, cardamom, ginger, allspice, nutmeg, and cloves in a large mixing bowl.
  3. Cream the room-temperature butter and dark brown sugar together until light and fluffy, about 4-5 minutes.
  4. Add the neutral oil, whole milk, eggs, and vanilla extract to the butter mixture. Mix on medium speed until well combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool the cakes in the pans for 10 minutes before transferring them to wire racks to cool completely.
  8. Prepare the cream cheese frosting while the cakes are cooling by beating the cold cream cheese and room-temperature butter until creamy.
  9. Add the sifted powdered sugar gradually, mixing until fluffy.
  10. Spread a generous layer of frosting on the first cake layer, place the second layer on top, and frost the top and sides of the cake.

Notes

For a zesty twist, add fresh lemon zest or fold in crushed nuts for a delightful crunch.
