Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners or spray with cooking spray.
- Mix wet ingredients: In a large bowl, whisk together the pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract until smooth and creamy.
- Combine dry ingredients: In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt until well combined.
- Blend together: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; you want a tender muffin.
- Add mix-ins: Gently fold in chocolate chips or walnuts, if desired, for extra indulgence.
- Fill muffin cups: Divide the batter evenly among the prepared muffin tin, filling each cup about 2/3 full.
- Bake and cool: Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let the muffins cool in the tin for a few minutes before transferring to a wire rack.
