A delightful Berry Chantilly Cake topped with fresh strawberries and blueberries, perfect for any occasion.

- 1 (8oz) package cream cheese, softened
- 1 1/2 sticks (3/4 cup) unsalted butter, softened
- 2 cups sugar
- 4 large eggs
- 3 cups cake flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 1 tablespoon vanilla extract
- Two 8-ounce packages cream cheese, softened
- 2 cups powdered sugar
- 2 teaspoons vanilla extract
- 3 cups heavy whipping cream
- Approximately 4 oz. fresh blueberries
- Approximately 1 1/4 cup sliced fresh strawberries
- Additional whole strawberries and blueberries for decoration
Instructions
- Preheat the oven to 325°F and grease and flour three 8-inch pans.
- Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
- Combine buttermilk, oil, and vanilla extract in another bowl.
- Mix softened butter and cream cheese until smooth in a mixer bowl.
- Gradually add sugar and mix until fluffy.
- Add eggs one at a time, mixing until incorporated.
- Alternately add flour mixture and milk mixture, starting and ending with flour.
- Divide the batter between the prepared pans and bake for 25-28 minutes, until a toothpick comes out clean.
- Cool cakes in pans for 5-10 minutes, then transfer to wire racks.
- Prepare the Chantilly cream by chilling the mixing bowl and beaters, then whip the cream until stiff peaks form.
- Mix softened cream cheese, powdered sugar, and vanilla until smooth, then gently fold into the whipped cream.
- Frost each layer of cake with Chantilly cream and berries before stacking.
- Frost the entire cake with any remaining Chantilly cream.
- Optionally, freeze the cake for 10-15 minutes to achieve a smoother finish.
Notes
You can bake the cake layers a day in advance and store them tightly wrapped at room temperature.
