Description

A comforting dish featuring roasted potatoes enveloped in creamy feta cheese, perfect for any gathering.


Ingredients

  • 4 medium-sized potatoes (Yukon Gold or red)
  • 1 block of feta cheese (around 8 oz)
  • 3 tablespoons olive oil
  • 1 teaspoon dried thyme (or fresh, if you have it!)
  • Juice and zest of 1 lemon
  • Salt and pepper, to taste
  • Optional: Fresh herbs for garnish (like parsley or dill)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the potatoes by scrubbing them clean and cutting them into quarters or sixths.
  3. Season the potatoes in a bowl with olive oil, salt, pepper, thyme, lemon juice, and zest.
  4. Arrange the seasoned potatoes in a 9×13-inch baking dish in a single layer.
  5. Add the block of feta cheese in the center and drizzle with more olive oil.
  6. Roast for about 35-40 minutes until the potatoes are golden and tender.
  7. Finish by removing from the oven and sprinkle with fresh herbs before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for a crisp finish.
