- 4 medium-sized potatoes (Yukon Gold or red)
- 1 block of feta cheese (around 8 oz)
- 3 tablespoons olive oil
- 1 teaspoon dried thyme (or fresh, if you have it!)
- Juice and zest of 1 lemon
- Salt and pepper, to taste
- Optional: Fresh herbs for garnish (like parsley or dill)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the potatoes by scrubbing them clean and cutting them into quarters or sixths.
- Season the potatoes in a bowl with olive oil, salt, pepper, thyme, lemon juice, and zest.
- Arrange the seasoned potatoes in a 9×13-inch baking dish in a single layer.
- Add the block of feta cheese in the center and drizzle with more olive oil.
- Roast for about 35-40 minutes until the potatoes are golden and tender.
- Finish by removing from the oven and sprinkle with fresh herbs before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for a crisp finish.
