- 1 ripe avocado
- 2 tablespoons pesto
- 2 eggs

Instructions
- Toast the slices of bread until golden brown.
- In a small bowl, mash the avocado with a fork, mixing in salt and pepper to taste.
- Spread the pesto evenly on the warm, toasted bread.
- Layer the mashed avocado generously over the pesto.
- In a skillet, heat a little olive oil over medium heat, then fry the eggs to your preference.
- Once cooked, gently place the eggs atop the avocado spread.
- For added flavor, sprinkle on red pepper flakes or add fresh cherry tomatoes or microgreens on top.
- Serve immediately and enjoy.
