Description

A cozy breakfast of creamy avocado and herby pesto on crispy toast, topped with perfectly fried eggs.


Ingredients

  • 2 slices of bread (your choice)
  • 1 ripe avocado
  • 2 tablespoons pesto
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil (for frying)
  • Optional toppings: red pepper flakes, cherry tomatoes, or microgreens

Instructions

  1. Toast the slices of bread until golden brown.
  2. In a small bowl, mash the avocado with a fork, mixing in salt and pepper to taste.
  3. Spread the pesto evenly on the warm, toasted bread.
  4. Layer the mashed avocado generously over the pesto.
  5. In a skillet, heat a little olive oil over medium heat, then fry the eggs to your preference.
  6. Once cooked, gently place the eggs atop the avocado spread.
  7. For added flavor, sprinkle on red pepper flakes or add fresh cherry tomatoes or microgreens on top.
  8. Serve immediately and enjoy.
