Ingredients

  • 2 large eggs
  • ½ cup unsweetened applesauce
  • ¼ cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 ½ cups chopped apples (about 2 medium apples)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a medium baking dish (about 8×8 or 9×9 inches).
  2. Whisk together the milk, eggs, applesauce, maple syrup, and vanilla until well combined.
  3. Stir in the oats, baking powder, cinnamon, nutmeg, and salt until everything is blended together harmoniously.
  4. Fold in the chopped apples and walnuts or pecans if you’re using them.
  5. Pour the mixture into the prepared dish and spread it evenly.
  6. Bake for 35–40 minutes, until the center is set and the top is golden brown.
  7. Let it cool slightly before serving.
