Description

A creamy, zesty lemon pudding made with chia seeds that’s perfect for a refreshing dessert.


Ingredients

  • 1 cup almond milk (or any preferred milk)
  • 1/4 cup chia seeds
  • 1/4 cup Greek yogurt (or dairy-free yogurt)
  • 1/4 cup honey or maple syrup (adjust to taste)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Pinch of salt
  • Fresh fruit and mint for topping (optional)

Instructions

  1. In a large mixing bowl, whisk together the almond milk, Greek yogurt, honey or maple syrup, lemon zest, lemon juice, and salt until smooth and well combined.
  2. Gradually add in the chia seeds, stirring to avoid clumping.
  3. Cover the bowl with plastic wrap or transfer the mixture into jars. Refrigerate for at least 2 hours, or overnight if time allows.
  4. Once set, give the pudding a good stir to ensure a smooth consistency.
  5. Serve the lemon chia pudding in pretty bowls or jars, and top with your favorite fresh fruit and a sprig of mint.

Notes

Make a batch at the beginning of the week for easy snacks or desserts. Substitute almond milk with oat or soy milk if desired.
