A creamy, zesty lemon pudding made with chia seeds that’s perfect for a refreshing dessert.
Ingredients

- 1 cup almond milk (or any preferred milk)
- 1/4 cup chia seeds
- 1/4 cup Greek yogurt (or dairy-free yogurt)
- 1/4 cup honey or maple syrup (adjust to taste)
- Zest of 1 lemon
- Juice of 1 lemon
- Pinch of salt
- Fresh fruit and mint for topping (optional)
Instructions
- In a large mixing bowl, whisk together the almond milk, Greek yogurt, honey or maple syrup, lemon zest, lemon juice, and salt until smooth and well combined.
- Gradually add in the chia seeds, stirring to avoid clumping.
- Cover the bowl with plastic wrap or transfer the mixture into jars. Refrigerate for at least 2 hours, or overnight if time allows.
- Once set, give the pudding a good stir to ensure a smooth consistency.
- Serve the lemon chia pudding in pretty bowls or jars, and top with your favorite fresh fruit and a sprig of mint.
Notes
Make a batch at the beginning of the week for easy snacks or desserts. Substitute almond milk with oat or soy milk if desired.
