Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and brown sugar until light and fluffy.
- Crack in the egg and pour in the vanilla extract, mixing until well combined.
- Whisk together the rolled oats, flour, baking soda, and salt in another bowl.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Use a spoon or cookie scoop to drop dough onto the prepared baking sheet.
- Bake for about 10-12 minutes, or until the edges are golden brown.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
