- 2 slices of hearty sourdough or whole-grain bread
- 1 cooked chicken breast, sliced or shredded
- 2 tablespoons pesto (store-bought or homemade)
- 2 slices of fresh mozzarella cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: fresh basil leaves for garnish
Instructions
- Start by heating a non-stick skillet over medium heat. Add the olive oil and let it warm up to a lovely shimmer.
- Spread a generous layer of pesto on one side of each slice of bread to create that creamy flavor base.
- Layer the sliced or shredded chicken evenly over the pesto on one slice of bread.
- Place the fresh mozzarella on top of the chicken, and sprinkle with salt and pepper to taste.
- Place the second slice of bread on top, pesto side down, creating a delightful sandwich.
- Carefully transfer your sandwich to the heated skillet. Cook for about 3-4 minutes, or until the bottom is golden and crispy.
- Using a spatula, gently flip the sandwich to toast the other side. Cook for an additional 3-4 minutes until the cheese is melty and gooey.
- Once golden brown and toasty, remove from the pan and let it cool slightly before slicing in half.
- If desired, garnish with fresh basil leaves for that extra touch of flavor and color.
Notes
Use leftover rotisserie chicken to save time, and keep the bread separate until you’re ready to toast it to maintain crispiness.
