Ingredients

  • 1 cup of chopped green cabbage
  • 1 cup of milk (whole or low-fat)
  • 4 tablespoons of unsalted butter
  • 34 slices of turkey bacon, cooked until crispy and chopped
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Prepare the potatoes: Place your cubed russet potatoes into a large pot, cover with cold salted water, and bring to a boil. Cook until tender, about 15-20 minutes.
  2. Cook the cabbage: In a separate pan, add a drizzle of olive oil and sauté the chopped green cabbage until tender and slightly caramelized, about 5-7 minutes.
  3. Mash the potatoes: Once fork-tender, drain and return to the pot. Add butter and milk, then mash until creamy and smooth.
  4. Combine ingredients: Gently fold in sautéed cabbage and crispy turkey bacon. Season with salt and pepper to taste.
  5. Serve and garnish: Spoon the Colcannon into a serving dish and sprinkle with sliced green onions for a fresh finish.
