Ingredients
Scale
- 2 pounds of russet potatoes, peeled and cubed
- 1 cup of chopped green cabbage
- 1 cup of milk (whole or low-fat)
- 4 tablespoons of unsalted butter
- 3–4 slices of turkey bacon, cooked until crispy and chopped
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- Prepare the potatoes: Place your cubed russet potatoes into a large pot, cover with cold salted water, and bring to a boil. Cook until tender, about 15-20 minutes.
- Cook the cabbage: In a separate pan, add a drizzle of olive oil and sauté the chopped green cabbage until tender and slightly caramelized, about 5-7 minutes.
- Mash the potatoes: Once fork-tender, drain and return to the pot. Add butter and milk, then mash until creamy and smooth.
- Combine ingredients: Gently fold in sautéed cabbage and crispy turkey bacon. Season with salt and pepper to taste.
- Serve and garnish: Spoon the Colcannon into a serving dish and sprinkle with sliced green onions for a fresh finish.
- Enjoy warm: Serve immediately and feel the warmth of the holiday spirit!
Notes
Make mashed potatoes a day in advance and reheat before adding cabbage and bacon. For extra creaminess, use a potato ricer.
