Description

Ingredients

  • 1 cup Greek yogurt

  • 1 teaspoon chili powder
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup fire-roasted corn (canned or frozen)
  • 1 cup bell pepper, diced
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the cooked chicken, black beans, corn, and diced bell pepper.
  2. In a separate bowl, mix the Greek yogurt with the cumin, chili powder, and lime juice until smooth.
  3. Pour the yogurt mixture over the chicken and vegetables, and stir until everything is well coated.
  4. Season with salt and pepper to taste, adjusting the spices as desired.
  5. Serve immediately or store in the refrigerator for meal prep.
