Description
A quick and easy shrimp stir-fry with fresh asparagus and mushrooms, perfect for weeknight dinners.
Ingredients

- 1 lb shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 8 oz mushrooms, sliced
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Optional: sesame seeds for garnish
Instructions
- Heat olive oil in a large pan or wok over medium-high heat.
- Add minced garlic and sauté for about 30 seconds, until fragrant.
- Add shrimp to the pan and cook until pink, about 3-4 minutes.
- Toss in asparagus and mushrooms, stir-frying for another 3-4 minutes until tender-crisp.
- Pour soy sauce over the mixture and stir well to combine.
- Season with salt and pepper to taste.
- Serve hot, garnished with sesame seeds if desired.
Notes
Make ahead by preparing shrimp and chopping veggies in advance. Leftovers can be stored in an airtight container in the fridge for up to three days.
