Description

A cozy weeknight dinner combining sausage and colorful veggies in a quick stir fry.


Ingredients

Scale
  • 1 lb sausage (Italian or smoked)
  • 4 cups green cabbage, chopped
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tsp red pepper flakes (optional)

Instructions

  1. Slice the sausage into bite-sized pieces.
  2. Chop the cabbage, dice the bell peppers, and onion.
  3. In a large skillet over medium-high heat, add sesame oil.
  4. Once hot, add the sausage and cook until browned (about 5 minutes).
  5. Add onions and garlic; sauté for 2 minutes until fragrant.
  6. Add cabbage and bell peppers; stir-fry until tender yet crisp.
  7. Pour in the soy sauce and sprinkle in red pepper flakes; mix well and bubble for an additional 5 minutes.
  8. Taste and adjust the seasoning before serving.

Notes

Make-ahead: Prepare veggies in advance. Leftovers can be stored for up to 3 days.
