Description

A comforting dessert that combines sweet strawberries and tart rhubarb under a golden, crumbly oat topping.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the strawberries, rhubarb, granulated sugar, cornstarch, vanilla extract, and lemon juice in a mixing bowl.
  3. Pour the mixture into a greased baking dish.
  4. Mix together the rolled oats, flour, brown sugar, melted butter, cinnamon, and salt until crumbly.
  5. Spread the oat mixture evenly over the fruit filling.
  6. Bake in the preheated oven for about 40-45 minutes, until the topping is golden brown and the fruit is bubbling.
  7. Let cool for a few minutes before serving.
