- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a skillet, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sautéing until soft and aromatic, about 3-4 minutes.
- Toss in sliced mushrooms and cook until browned.
- Push veggies to the side and add chicken breasts, seasoning generously with salt and pepper.
- Cook chicken until golden brown on both sides, about 6-7 minutes per side.
- Pour in the heavy cream, stirring gently to combine with mushrooms and onions.
- Let it simmer a few minutes, allowing the sauce to thicken.
- Serve over mashed potatoes, garnished with fresh parsley.
