Description

A delicious Mediterranean-inspired quesadilla filled with spinach, feta, and mozzarella, perfect for busy weeknights.


Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 red onion, chopped
  • 4 tortillas
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chopped red onion and sauté until softened.
  3. Add spinach and cook until wilted.
  4. Remove from heat and mix in crumbled feta and shredded mozzarella.
  5. Place the mixture on a tortilla, fold it in half, and cook on a skillet until crispy and golden on both sides.
  6. Slice and serve warm.
