Description

Delicious Mediterranean Quesadillas filled with creamy mozzarella, tangy feta, fresh spinach, and sweet red onion, perfect for a quick weeknight dinner.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon olive oil
  • Black pepper, to taste

Instructions

  1. Combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and a pinch of black pepper in a mixing bowl.
  2. Lay one tortilla flat on a clean surface and place one-fourth of the filling mixture onto one half…
  3. Fold the tortilla over, covering the filling like a delicious pocket of goodness.
  4. Heat a non-stick skillet over medium heat and pour in the olive oil, allowing it to warm and sizzle.
  5. Carefully place the filled tortilla into the skillet. Let it cook for about 3-4 minutes until the bottom is golden brown and crispy.
  6. Flip the quesadilla and cook for another 3-4 minutes until both sides are perfectly crispy and golden.
  7. Remove from heat, slice into wedges, and serve warm.
