Description

A delicious and cheesy quesadilla filled with fresh spinach, feta, mozzarella, and red onion, perfect for cozy dinners or brunches.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, spinach, tomato, red onion, and black pepper. Mix well until all the ingredients are perfectly incorporated.
  2. Lay one tortilla flat on a clean surface and place one-fourth of the filling mixture on one half of the tortilla. Carefully fold it over to cover the filling.
  3. Heat a non-stick skillet over medium heat and add the olive oil, allowing it to warm up.
  4. Gently place the filled tortilla in the skillet and cook for about 3-4 minutes until the outer edge turns golden brown and crispy.
  5. Flip the quesadilla carefully and cook for another 3-4 minutes until both sides are beautifully crispy and golden.
  6. Remove from heat, slice into wedges, and serve warm.

Notes

You can customize the filling with your favorite vegetables or proteins. Make ahead by preparing the mixture a day in advance.
