- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- In a mixing bowl, combine the mozzarella cheese, feta cheese, spinach, tomato, red onion, and black pepper. Mix well until all the ingredients are perfectly incorporated.
- Lay one tortilla flat on a clean surface and place one-fourth of the filling mixture on one half of the tortilla. Carefully fold it over to cover the filling.
- Heat a non-stick skillet over medium heat and add the olive oil, allowing it to warm up.
- Gently place the filled tortilla in the skillet and cook for about 3-4 minutes until the outer edge turns golden brown and crispy.
- Flip the quesadilla carefully and cook for another 3-4 minutes until both sides are beautifully crispy and golden.
- Remove from heat, slice into wedges, and serve warm.
Notes
You can customize the filling with your favorite vegetables or proteins. Make ahead by preparing the mixture a day in advance.
