Description

A wholesome Mediterranean Chicken Stir Fry recipe that comes together in just 30 minutes, bursting with vibrant flavors and healthy ingredients.


Ingredients

Scale
  • 1 pound Chicken breasts, cut into uniform pieces
  • 2 tablespoons Extra virgin olive oil
  • 1 medium Zucchini
  • 1 large Red bell pepper
  • 1 medium Red onion
  • 1 cup Cherry tomatoes
  • 1/2 cup Kalamata olives
  • 2 cloves Garlic, minced
  • 1/4 cup Sun-dried tomatoes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried thyme
  • 2 tablespoons Lemon juice
  • 1/2 cup Feta cheese
  • 1/4 cup Fresh parsley, optional

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the chicken, season with salt and pepper, and sauté until golden and cooked through, about 6-7 minutes. Remove and set aside.
  3. Add the remaining olive oil, then the red onion, zucchini, and red bell pepper. Sauté until just tender, around 4-5 minutes.
  4. Stir in the garlic, cherry tomatoes, olives, sun-dried tomatoes, oregano, basil, and thyme. Cook for another 2-3 minutes.
  5. Return the chicken to the skillet, drizzle with lemon juice, and mix well.
  6. If using feta, sprinkle on top and let sit for a minute before serving.
  7. Garnish with parsley if desired, serve warm, and enjoy!

Notes

Make ahead by chopping vegetables and chicken in advance. Store leftovers in the fridge for up to 3 days.
