A wholesome Mediterranean Chicken Stir Fry recipe that comes together in just 30 minutes, bursting with vibrant flavors and healthy ingredients.

- 1 pound Chicken breasts, cut into uniform pieces
- 2 tablespoons Extra virgin olive oil
- 1 medium Zucchini
- 1 large Red bell pepper
- 1 medium Red onion
- 1 cup Cherry tomatoes
- 1/2 cup Kalamata olives
- 2 cloves Garlic, minced
- 1/4 cup Sun-dried tomatoes
- 1 teaspoon Dried oregano
- 1 teaspoon Dried basil
- 1 teaspoon Dried thyme
- 2 tablespoons Lemon juice
- 1/2 cup Feta cheese
- 1/4 cup Fresh parsley, optional
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chicken, season with salt and pepper, and sauté until golden and cooked through, about 6-7 minutes. Remove and set aside.
- Add the remaining olive oil, then the red onion, zucchini, and red bell pepper. Sauté until just tender, around 4-5 minutes.
- Stir in the garlic, cherry tomatoes, olives, sun-dried tomatoes, oregano, basil, and thyme. Cook for another 2-3 minutes.
- Return the chicken to the skillet, drizzle with lemon juice, and mix well.
- If using feta, sprinkle on top and let sit for a minute before serving.
- Garnish with parsley if desired, serve warm, and enjoy!
Notes
Make ahead by chopping vegetables and chicken in advance. Store leftovers in the fridge for up to 3 days.
