Description

A vibrant and refreshing slaw that combines ripe mangoes with crunchy vegetables, perfect for any occasion.


Ingredients

  • 2 ripe mangoes, peeled and julienned
  • 1 cup red cabbage, shredded
  • 1 cup carrots, shredded
  • 1/4 cup red bell pepper, julienned
  • 1/4 cup green onions, sliced
  • 1/4 cup cilantro, chopped
  • 3 tablespoons lime juice
  • 2 tablespoons honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mangoes, red cabbage, carrots, red bell pepper, green onions, and cilantro.
  2. In a small bowl, whisk together the lime juice and honey, then season with salt and pepper to taste.
  3. Pour the dressing over the slaw and toss gently to combine, allowing all those gorgeous colors to meld beautifully.
  4. Serve immediately or refrigerate for 30 minutes to let the flavors mingle together, creating a dish that’s all the more delicious!

Notes
