- 4 medium potatoes, diced
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup sour cream or Greek yogurt
- Chopped green onions or cilantro for garnish
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced potatoes with olive oil, salt, and pepper and spread them on a baking sheet.
- Bake for 25-30 minutes, or until crispy and golden.
- Cook the ground beef or turkey in a skillet over medium heat until browned, then drain excess fat.
- Add the taco seasoning and a splash of water to the meat, stir, and let simmer for a few minutes.
- Combine the roasted potatoes, cooked meat, black beans, corn, and diced tomatoes in a large bowl.
- Top with shredded cheese and return to the oven for 5-10 minutes, until the cheese is melted and bubbly.
- Serve warm with sour cream or Greek yogurt and garnish with green onions or cilantro.
