Description

Delightful mini sweet peppers filled with a savory beef mixture and topped with melted cheddar cheese, perfect for a comforting weeknight dinner.

Ingredients

Scale
  • Mini sweet peppers
  • 1 lb Ground beef
  • 1 cup Cheddar cheese, shredded
  • Onion (optional)
  • Garlic (optional)
  • Salt
  • Pepper
  • Olive oil (for cooking)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the mini sweet peppers in half lengthwise and remove the seeds.
  3. In a skillet, heat a drizzle of olive oil over medium heat. Add chopped onions and garlic (if using), and sauté until they become translucent and fragrant.
  4. Add the ground beef to the skillet. Season with salt and pepper, cooking until the beef is nicely browned and cooked through.
  5. Carefully stuff each pepper half with the cooked beef mixture, using a spoon to pack it in snugly, and then generously top with shredded cheddar cheese.
  6. Arrange the stuffed peppers in a baking dish and place them in the preheated oven. Bake for 15-20 minutes, or until the peppers are tender and the cheese is bubbling and melted to golden perfection.
  7. Serve hot, perhaps with a side salad or on their own, to savor every bite.

Notes

Feel free to swap out ground beef for turkey or chicken and add your favorite spices for extra flavor.
