Description

A cozy weeknight dish combining tender chicken and a luscious honey-peach sauce with a hint of jalapeño heat.


Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 jalapeños, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and black pepper on both sides.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the seasoned chicken breasts and sear for 3-4 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set it aside on a plate.
  6. Add the diced jalapeños and peaches to the same skillet and sauté for about 2-3 minutes until softened.
  7. Whisk together the honey, apple cider vinegar, water, and cornstarch in a small bowl until smooth.
  8. Pour the honey mixture over the jalapeños and peaches and bring to a simmer.
  9. Return the chicken breasts to the skillet, spooning some sauce over the top.
  10. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.
  11. Remove from the oven and allow the chicken to rest for a few minutes before serving.
  12. Serve hot, spooning sauce over each piece.

Notes

You can marinate the chicken overnight for extra flavor. Store leftovers in an airtight container for up to 3 days.
