- 1 pound Italian beef sausage, casings removed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 2 cups uncooked pasta (like shells or rotini)
- 2 cups fresh spinach or kale
- 1 teaspoon dried Italian seasoning
- Salt and pepper, to taste
- 1 cup heavy cream
- Grated Parmesan cheese, for serving
Instructions
- In a large pot or Dutch oven, brown the Italian beef sausage over medium heat until it’s nicely crumbled and no longer pink, about 5-7 minutes.
- Add the diced onion and minced garlic to the pot and sauté for an additional 3-4 minutes, or until the onion is soft and translucent.
- Pour in the chicken or vegetable broth and stir in the diced tomatoes, scraping up any bits stuck to the bottom of the pot.
- Add the uncooked pasta and dried Italian seasoning, then simmer for about 8-10 minutes until the pasta is tender.
- Stir in the fresh spinach or kale and let it wilt into the soup.
- Finally, pour in the heavy cream, stirring until creamy, and season with salt and pepper before serving, topped with grated Parmesan cheese.
