- 1/2 cup unsalted butter (cold and cubed)
- 3/4 cup buttermilk (or milk + 1 tbsp vinegar)
- 1 cup fresh or frozen blueberries
- 1 teaspoon vanilla extract (optional)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- Add the cold, cubed butter to the dry ingredients and blend until the mixture resembles coarse crumbs.
- Gently fold in the blueberries.
- Pour in the buttermilk and optional vanilla extract, mixing gently until just combined.
- Turn the dough onto a floured surface and pat it into a 1-inch thick rectangle. Cut into desired shape.
- Place the biscuits on the prepared baking sheet and bake for 15–18 minutes, or until golden brown on top.
- Enjoy warm with butter, honey, or powdered sugar.
