Description

Delicious, flaky blueberry biscuits perfect for breakfast or a sweet treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup unsalted butter (cold and cubed)
  • 3/4 cup buttermilk (or milk + 1 tbsp vinegar)
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Add the cold, cubed butter to the dry ingredients and blend until the mixture resembles coarse crumbs.
  4. Gently fold in the blueberries.
  5. Pour in the buttermilk and optional vanilla extract, mixing gently until just combined.
  6. Turn the dough onto a floured surface and pat it into a 1-inch thick rectangle. Cut into desired shape.
  7. Place the biscuits on the prepared baking sheet and bake for 15–18 minutes, or until golden brown on top.
  8. Enjoy warm with butter, honey, or powdered sugar.
