Description

A cozy, comforting side dish featuring sweet and buttery roasted carrots coated in a honey garlic mixture.


Ingredients

  • 1 pound fresh carrots, trimmed and cut into uniform pieces
  • 4 tablespoons unsalted butter
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small saucepan, melt the butter over low heat. Stir in the honey and minced garlic until combined.
  3. On a baking sheet, toss the trimmed carrots with the honey garlic butter mixture until well-coated.
  4. Sprinkle with salt and pepper.
  5. Roast in the oven for 20-25 minutes, flipping halfway through, until tender and golden brown.
  6. Garnish with fresh parsley and serve warm.

Notes

Carrots can be prepped ahead of time. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
