- 1 pound fresh carrots, trimmed and cut into uniform pieces
- 4 tablespoons unsalted butter
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a small saucepan, melt the butter over low heat. Stir in the honey and minced garlic until combined.
- On a baking sheet, toss the trimmed carrots with the honey garlic butter mixture until well-coated.
- Sprinkle with salt and pepper.
- Roast in the oven for 20-25 minutes, flipping halfway through, until tender and golden brown.
- Garnish with fresh parsley and serve warm.
Notes
Carrots can be prepped ahead of time. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
