Description

A comforting and flavorful high protein meal featuring creamy Cajun chicken and rice, perfect for family dinners.


Ingredients

Scale
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 1 tsp Paprika
  • 1 tsp Chilli Powder
  • 800 g Chicken Breast (cut into halves)
  • 1.5 tsp Cajun Seasoning Mix
  • 2 tsp Olive Oil
  • 25 g Grass Fed Butter for Cooking
  • 1 Medium Red Onion (chopped)
  • 45 Garlic Cloves (chopped)
  • 1/2 tsp Cajun Seasoning Mix
  • Fresh Parsley (for garnish)
  • 15 g Grass Fed Butter
  • 1/2 tsp Cajun Seasoning Mix
  • 250 ml Milk
  • 150 g Light Cream Cheese
  • 40 g Parmesan

Instructions

  1. Marinate the chicken breast pieces overnight with 1.5 tsp of Cajun seasoning mix and olive oil. Seal in an airtight glass container.
  2. Heat a pan over medium-high heat, melt the butter, and cook the marinated chicken for 6-7 minutes per side until crispy and golden. Let it rest before slicing.
  3. Sauté the chopped onion and garlic in the same pan until fragrant, about 2 minutes. Add 1/2 tsp Cajun seasoning and toss in day-old rice, coating it well.
  4. Melt the extra butter in the pan, add 1/2 tsp Cajun seasoning, and whisk in the milk. Once warm, stir in the cream cheese and Parmesan until smooth.
  5. Layer the Cajun rice on a plate, top with sliced chicken, and drizzle the creamy sauce. Garnish with fresh parsley.

Notes

This dish can be made ahead and reheats well. Store leftovers in an airtight container for up to 3 days.
