Description

Delightful cookies that combine the essence of apple pie with the health benefits of oats, perfect for breakfast or a sweet snack.


Ingredients

  • 2 cups rolled oats
  • 1 cup whole wheat flour or gluten-free flour
  • 1/2 cup mashed bananas or applesauce
  • 1 cup grated apple
  • 1/2 cup honey or maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the rolled oats, flour, baking soda, cinnamon, and salt until well mixed.
  3. In a separate bowl, mix together the mashed bananas or applesauce, honey or maple syrup, grated apple, and vanilla extract until blended.
  4. Combine the wet ingredients with the dry ingredients, mixing until the dough is well incorporated.
  5. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper, placing them a couple of inches apart.
  6. Bake for 12-15 minutes, or until they’re delightfully golden brown.
