- 2 cups rolled oats
- 1 cup whole wheat flour or gluten-free flour
- 1/2 cup mashed bananas or applesauce
- 1 cup grated apple
- 1/2 cup honey or maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the rolled oats, flour, baking soda, cinnamon, and salt until well mixed.
- In a separate bowl, mix together the mashed bananas or applesauce, honey or maple syrup, grated apple, and vanilla extract until blended.
- Combine the wet ingredients with the dry ingredients, mixing until the dough is well incorporated.
- Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper, placing them a couple of inches apart.
- Bake for 12-15 minutes, or until they’re delightfully golden brown.

Notes
These cookies can be made ahead of time and stored in the refrigerator for up to 3 days. For longer storage, freeze the dough in balls and bake from frozen when needed.
