- 1 lb ground turkey
- 2 large sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 1 cup shredded mozzarella or cheddar cheese
- Fresh parsley or cilantro, chopped (optional garnish)
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Sauté the diced onion for about 3–4 minutes until it starts to turn soft and translucent.
- Add the ground turkey along with a sprinkling of salt and pepper. Cook until the turkey is nicely browned, about 5–6 minutes.
- Stir in the garlic, red bell pepper, sweet potatoes, smoked paprika, ground cumin, dried thyme, and additional salt and pepper to taste. Cook for another 3–5 minutes until everything is fragrant and well combined.
- Transfer the turkey and sweet potato mixture into the prepared baking dish, spreading it evenly. Cover with foil and bake for 25 minutes, or until the sweet potatoes are tender and easily pierced with a fork.
- Remove the foil and sprinkle the shredded cheese over the top. Return to the oven and bake for an additional 10–15 minutes, until the cheese is bubbly and golden.
- Garnish with fresh parsley or cilantro before serving hot.
Notes
Make-ahead by preparing the mixture a day in advance. Leftovers can be stored in the fridge for up to 4 days. Feel free to customize with your favorite veggies.
