Description

A cozy weeknight dinner featuring roasted sweet potatoes, savory ground beef, and spicy-hot honey topped with creamy cottage cheese and avocado.


Ingredients

  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. Toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 40–45 minutes, turning them halfway through.
  4. In a skillet, heat the remaining tablespoon of olive oil over medium heat and sauté the onion until softened, about 5 minutes.
  5. Add the ground beef and taco seasoning, breaking apart the meat and cooking until browned, about 6-8 minutes.
  6. Assemble the bowls by layering roasted sweet potatoes, seasoned beef, creamy avocado slices, and a scoop of cottage cheese.
  7. Drizzle hot honey over each bowl before serving.

Notes

Make ahead by roasting sweet potatoes in advance. Leftovers can be stored in an airtight container for up to four days.
