Ingredients

  • 2 zucchinis, sliced

  • 1 cup cooked rice or quinoa
  • 1/2 cup sauce of choice (e.g., chimichurri, teriyaki)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the steak with olive oil, salt, pepper, garlic powder, and onion powder.
  3. Grill the steak for about 5-7 minutes on each side for medium rare or until desired doneness.
  4. Toss zucchini slices with olive oil, salt, and pepper.
  5. Grill zucchini for about 3-4 minutes on each side until tender.
  6. Once the steak has rested, slice it against the grain.
