Description

Ingredients

  • 1 lb Chicken breast
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 3 cloves Garlic, minced
  • 1 tablespoon Oregano
  • Salt and Pepper, to taste
  • 1 Cucumber, diced
  • 1 cup Tomatoes, diced
  • 1/2 Red onion, thinly sliced
  • 1 cup Feta cheese, crumbled
  • 1 cup Rice or quinoa
  • 1 cup Yogurt
  • 1 tablespoon Dill, chopped
  • 1 tablespoon Vinegar

Instructions

  1. Marinate the chicken: In a bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the chicken breast, ensuring it’s well-coated. Let it marinate for at least 30 minutes.
  2. Grill the chicken: Preheat your grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes per side until it’s fully cooked.
  3. Prepare the tzatziki sauce: In a separate bowl, combine the grated cucumber, yogurt, minced garlic, chopped dill, vinegar, salt, and pepper. Mix well until creamy.
  4. Cook the rice or quinoa: Follow package instructions to cook and fluff the rice or quinoa.
  5. Assemble the bowls: Start with rice or quinoa, add grilled chicken, diced tomatoes, cucumber, red onion, sprinkle with feta, and drizzle with tzatziki sauce.

Notes
