Description

A cozy and delicious gluten-free banana bread, filled with the sweetness of ripe bananas, perfect for any family brunch or snack.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free all-purpose flour
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until combined.
  4. Mix in the baking soda and a pinch of salt.
  5. Add the sugar, beaten egg, and vanilla extract, whisking until blended.
  6. Gently stir in the gluten-free flour until just combined.
  7. Fold in chocolate chips and chopped walnuts if using.
  8. Pour the batter into the loaf pan, smoothing the top.
  9. Bake for 60-65 minutes until a toothpick comes out clean.
  10. Let it cool in the pan for a few minutes before transferring to a wire rack.

Notes

For best results, use very ripe bananas. This bread freezes well for up to three months.
