- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup gluten-free all-purpose flour
- 1/2 cup chocolate chips (optional)
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- Mash the ripe bananas with a fork until smooth.
- Stir in the melted butter until combined.
- Mix in the baking soda and a pinch of salt.
- Add the sugar, beaten egg, and vanilla extract, whisking until blended.
- Gently stir in the gluten-free flour until just combined.
- Fold in chocolate chips and chopped walnuts if using.
- Pour the batter into the loaf pan, smoothing the top.
- Bake for 60-65 minutes until a toothpick comes out clean.
- Let it cool in the pan for a few minutes before transferring to a wire rack.
Notes
For best results, use very ripe bananas. This bread freezes well for up to three months.
