Ingredients

- 1 head of cabbage, chopped
- 1 cup Fritos corn chips
- 1 cup shredded carrots
- 1/2 cup red onion, diced
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chopped cabbage, shredded carrots, diced red onion, and shredded cheese.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.
- Pour the dressing over the cabbage mixture and toss well to combine.
- Just before serving, fold in the Fritos for a satisfying crunch.
- Serve immediately, or refrigerate for a short time before serving.
Notes
This salad can be made a few hours in advance. Add the Fritos right before serving to keep them crunchy.
