Description

A colorful, nutritious blend of fresh ingredients that is quick and easy to prepare, perfect for busy weeknights or gatherings.


Ingredients

  • 5 cups mixed greens
  • 1 cup cucumbers, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup carrots, thinly sliced
  • ½ red onion, thinly sliced
  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt, to taste
  • Freshly ground pepper, to taste

Instructions

  1. In a large bowl, combine mixed greens and chopped veggies (cucumbers, cherry tomatoes, carrots, and red onion).
  2. In a separate small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to create the vinaigrette.
  3. Drizzle the vinaigrette over the salad, tossing gently to combine. Serve immediately.

Notes

To keep the salad fresh, prep veggies ahead of time but keep the vinaigrette separate until serving.
