Ingredients

  • 2 cups shredded chicken
  • 1 can black beans, drained and rinsed
  • 8 ounces cream cheese
  • 1 cup chicken broth
  • 1 can diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup corn (optional)
  • Chopped cilantro for garnish

Instructions

  1. Place the shredded chicken, black beans, cream cheese, chicken broth, diced tomatoes, chili powder, cumin, garlic powder, salt, and pepper in the slow cooker.
  2. Stir until the cream cheese is well mixed with the other ingredients.
  3. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  4. Before serving, stir in corn if using.
  5. Serve hot, garnished with chopped cilantro.
