- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tsp dried Italian herbs

- 1/4 cup chicken broth
- Fresh parsley for garnish (optional)
Instructions
- Mix the Parmesan cheese, minced garlic, Italian herbs, salt, and pepper until well combined.
- Rub the mixture all over the chicken breasts for maximum flavor.
- Place the baby potatoes at the bottom of the crockpot and drizzle with olive oil.
- Toss the potatoes to coat them evenly.
- Gently place the seasoned chicken on top of the potatoes.
- Pour the chicken broth over everything to keep the chicken moist.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Garnish with fresh parsley before serving.
Notes
For a zesty twist, add sun-dried tomatoes. For creamier comfort, stir in cream cheese during the last hour.
