Ingredients

  • 1 1/2 lbs Yukon Gold or red potatoes, scrubbed and diced
  • 8 oz thick-cut turkey bacon, chopped
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons butter or olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon freshly cracked black pepper
  • Optional: 1/2 teaspoon garlic powder or 1 clove garlic, minced
  • Optional: 1/4 teaspoon smoked paprika

Instructions

  1. Begin by scrubbing and dicing the potatoes into 1/2-inch cubes. Thinly slice the onion and chop the turkey bacon into bite-sized pieces. Chop the parsley and measure out your butter and seasonings.
  2. Heat a large skillet over medium heat. Add in the chopped turkey bacon and cook, stirring occasionally, until it turns golden brown and the edges become crispy (about 6-8 minutes).
  3. Push the cooked bacon to one side of the skillet. Add the sliced onions along with a pinch of salt. Sauté until the onions are softened and lightly golden, about 2-3 minutes.
  4. Stir in the diced potatoes and sprinkle with sea salt, black pepper, and the optional garlic powder and smoked paprika. Toss everything together to coat the potatoes.
  5. Spread the mixture in an even layer across the skillet. Cook undisturbed for 4-5 minutes to achieve a golden crust.
  6. Once the crust is forming, gently flip the potatoes using a spatula. Continue cooking, stirring every 3-4 minutes, until the potatoes are fork-tender and crispy all over (10-15 minutes).
  7. For an extra crunch, dot the top with remaining butter and broil for 2-3 minutes, or let them crisp up on the stovetop.
  8. Finally, sprinkle with fresh parsley and adjust the seasoning as needed. Serve hot straight from the skillet.

Notes

This dish can be made ahead; just prep the potatoes and bacon and store them in the fridge overnight. Store any leftovers in an airtight container for up to 3-4 days.
