- 1 1/2 lbs Yukon Gold or red potatoes, scrubbed and diced
- 8 oz thick-cut turkey bacon, chopped
- 1 large yellow onion, thinly sliced
- 2 tablespoons butter or olive oil
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon sea salt, or to taste
- 1/4 teaspoon freshly cracked black pepper
- Optional: 1/2 teaspoon garlic powder or 1 clove garlic, minced
- Optional: 1/4 teaspoon smoked paprika
Instructions
- Begin by scrubbing and dicing the potatoes into 1/2-inch cubes. Thinly slice the onion and chop the turkey bacon into bite-sized pieces. Chop the parsley and measure out your butter and seasonings.
- Heat a large skillet over medium heat. Add in the chopped turkey bacon and cook, stirring occasionally, until it turns golden brown and the edges become crispy (about 6-8 minutes).
- Push the cooked bacon to one side of the skillet. Add the sliced onions along with a pinch of salt. Sauté until the onions are softened and lightly golden, about 2-3 minutes.
- Stir in the diced potatoes and sprinkle with sea salt, black pepper, and the optional garlic powder and smoked paprika. Toss everything together to coat the potatoes.
- Spread the mixture in an even layer across the skillet. Cook undisturbed for 4-5 minutes to achieve a golden crust.
- Once the crust is forming, gently flip the potatoes using a spatula. Continue cooking, stirring every 3-4 minutes, until the potatoes are fork-tender and crispy all over (10-15 minutes).
- For an extra crunch, dot the top with remaining butter and broil for 2-3 minutes, or let them crisp up on the stovetop.
- Finally, sprinkle with fresh parsley and adjust the seasoning as needed. Serve hot straight from the skillet.
Notes
This dish can be made ahead; just prep the potatoes and bacon and store them in the fridge overnight. Store any leftovers in an airtight container for up to 3-4 days.
