Description

A delightful twist on traditional chicken tenders, infused with Greek flavors and crispy breadcrumbs, perfect for busy weeknight dinners.


Ingredients

  • 1 lb chicken tenders
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup breadcrumbs
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the Greek yogurt, minced garlic, lemon juice, olive oil, oregano, salt, and black pepper to create a flavorful marinade.
  3. Add the chicken tenders to the marinade and coat them well. Set aside to marinate for at least 30 minutes.
  4. While the chicken marinates, place the breadcrumbs on a large plate.
  5. After marinating, roll each chicken tender in breadcrumbs until well coated.
  6. Arrange the breaded chicken tenders on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 20-25 minutes or until cooked through and golden brown.
  8. Serve hot, garnished with crumbled feta cheese on top.

Notes

You can marinate the chicken the night before for convenience. Substitute Greek yogurt with sour cream if needed.
