Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 cup heavy cream
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • Fresh herbs (like basil or parsley) for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chicken pieces and cook until they are beautifully browned and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, sauté the onion until soft and translucent, then add the minced garlic and cook until fragrant.
  5. Add the halved cherry tomatoes and let them soften, creating a juicy base.
  6. Stir in the spinach and cook until wilted.
  7. Pour in the heavy cream and bring to a gentle simmer.
  8. Return the chicken to the skillet, stirring to coat in the sauce.
