Description

A cozy and comforting low carb chicken casserole that’s rich, creamy, and family-friendly. Perfect for busy weeknight dinners.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup broccoli florets (fresh or frozen)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup almond flour (optional for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix cream cheese, sour cream, garlic powder, onion powder, salt, and pepper until smooth.
  3. Stir in chicken, broccoli, and half of the cheddar cheese until well combined.
  4. Transfer the mixture into a greased baking dish, spreading it evenly.
  5. If using, sprinkle almond flour on top and add the remaining cheddar cheese.
  6. Bake for 25-30 minutes, or until heated through and cheese is bubbly and golden.
  7. Let cool slightly before serving.

Notes

Make ahead by preparing the mixture a day in advance and refrigerating. Leftovers can be stored in the fridge for up to three days.
