A creamy and cheesy low carb casserole packed with tender broccoli, shredded chicken, and crispy turkey bacon, perfect for busy weeknights.


Ingredients

  • 5 cups broccoli florets
  • 8 slices cooked turkey bacon, chopped
  • 4 cups cooked chicken, shredded or diced
  • 3 cloves garlic, minced
  • ½ cup shredded mozzarella
  • ½ cup shredded cheddar
  • 1 cup ranch dressing
  • ½ cup shredded cheddar (for topping)
  • ½ cup shredded mozzarella (for topping)

Instructions

  1. Preheat your oven to 375°F and lightly grease a 9 x 13-inch baking dish.
  2. Steam or blanch the broccoli until just tender, then drain well, letting any excess moisture escape.
  3. Mix together the cooked chicken, broccoli, chopped turkey bacon, minced garlic, mozzarella, cheddar, and ranch dressing until well combined and creamy.
  4. Spread the mixture evenly into the prepared baking dish, allowing the flavors to meld in every bite.
  5. Sprinkle the top with additional shredded cheddar and mozzarella for that extra cheesy goodness.
