Ingredients

  • Gnocchi (store-bought or homemade)
  • Fresh spinach (about 2 cups)
  • Feta cheese (crumbled)
  • Olive oil (2 tablespoons)
  • Garlic (2 cloves, minced)
  • Heavy cream or cream cheese (1 cup)
  • Salt (to taste)
  • Pepper (to taste)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Cook the gnocchi according to package instructions. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant.
  3. Stir in the fresh spinach, cooking until it wilts and softens.
  4. Pour in the heavy cream (or cream cheese) and crumble the feta cheese over the top.
  5. Add the cooked gnocchi to the skillet, mixing everything until well combined. Season with salt and pepper to taste.
  6. Serve warm, topped with grated Parmesan cheese if desired.
