Ingredients
- Gnocchi (store-bought or homemade)
- Fresh spinach (about 2 cups)
- Feta cheese (crumbled)
- Olive oil (2 tablespoons)
- Garlic (2 cloves, minced)
- Heavy cream or cream cheese (1 cup)
- Salt (to taste)
- Pepper (to taste)
- Grated Parmesan cheese (optional, for serving)
Instructions
- Cook the gnocchi according to package instructions. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant.
- Stir in the fresh spinach, cooking until it wilts and softens.
- Pour in the heavy cream (or cream cheese) and crumble the feta cheese over the top.
- Add the cooked gnocchi to the skillet, mixing everything until well combined. Season with salt and pepper to taste.
- Serve warm, topped with grated Parmesan cheese if desired.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat on the stovetop for the best results.
